Chinese Pork Buns

"These tasty Chinese pork buns will be a real hit, a sweet dough with BBQ pork inside, they are very easy to make, they can be baked or you can steam them. "

 

Breads, Dough's

 

INGREDIENTS:

 

2 packets of active dry yeast
1 3/4 cp of lukewarm water
3 cp s of all purpose flour
2 cp s pastry flour
1/2 cp sugar
1 tsp salt


 

For the filling you will need:


1 lb Chinese BBQ Pork sliced
1/2 lb Chinese sweet sausage
3 tbs s diced red onion
1/4 cp diced water crest

1 tbs rice cooking wine
2 tbs soy sauce
1/4 cp of thick Hoisin sauce
1 tsp sesame oil

  • DIRECTIONS:

    In a bowl add the lukewarm water. Be sure that the temperature is between 110 - 120. Add a tsp of sugar to the water and give a stir.
     
    Sprinkle the 2 packages of active dry yeast on top of the water. Set aside for 5 - 8 minutes. This will help to give the yeast time to activate. After the yeast has become foamy, use a whisk and give the yeast a stir.
     
    Pour the yeast mixture into a larger bowl. Add in the sugar and half of the flour .
     
    Once you have add half of the flour. Use a wooden spoon and mix together till smooth.
     
    Add in the salt. Then add the flour, only a half a cp at a time. Continue to mix in the flour till the dough is no longer sticky.
     
    Sprinkle a flat surface lightly with flour and rub some on your hands. Place the dough onto the floured surface and create a ball. Using the palm of your hands, push the dough away with a rolling motion. Fold the dough back towards yourself. Then give the dough a quarter turn. Continue this sequence of pushing, folding and turning. Knead the dough for about 6-8 minutes. Adding flour as you need it.

    Once the dough has become soft and elastic. Place the dough into a lightly greased bowl and cover with plastic wrap for about an hour or till double in size.

  • While the dough is rising we can start making the filling. To make things simple I purchased my BBQ pork at the Chinese grocery. You can use your own pork butt and cook it yourself. But it is a lot easier to just buy it already cooked at the Chinese market. You can also buy your Chinese cured sausage.
