Cranberry Orange Nut Muffins

INGREDIENTS:

 

Cooking Spray
1 1/2 cps flour
1/2 cp sugar
2 tsp baking powder
1/2 tsp salt
2 eggs, slightly beaten
1/2 cp  light corn syrup
1/2 cp orange juice
1/4 cp vegetable oil
1 tsp grated orange peel
1 cp fresh or frozen cranberries or blueberries
1/2 cp coarsely chopped walnuts

    DIRECTIONS:

     

    Preheat oven to 400°F. Spray 12 (2-1/2-inch) muffin pan cps with cooking spray.

    Combine flour, sugar, baking powder and salt in a medium bowl.

    Blend eggs, light corn syrup , orange juice, oil and orange peel in a large bowl; stir in flour mixture just until moistened. Fold in berries and walnuts.

    Spoon into prepared muffin cps.

     

    Bake for 18 to 22 minutes or until lightly browned and firm to touch. Cool in pan 5 minutes; remove from pan. Serve warm.

     

    Original recipe yield: 1 Dozen
