INGREDIENTS:
No-Stick Cooking Spray
5 cps Best All-Purpose Flour
1 cp sugar
1 tbs baking powder
1 1/2 tsp salt
1 tsp baking soda
1/2 cp Butter Flavor Crisco all-vegetable shortening or cut
into cubes, room temperature
2 1/2 cps raisins
3 tbs caraway seeds
2 1/2 cps buttermilk
1 large egg

DIRECTIONS:
Preheat oven to 350ºF. Generously spray a heavy ovenproof 10-inch
round ovenproof skillet with No Stick Cooking Spray; set
aside.
In a large mixing bowl whisk together flour, sugar, baking powder,
salt and baking soda; add Butter Flavor Crisco. Using fingertips,
rub in until coarse crumbs form. Stir in raisins and caraway
seeds.
In a separate medium bowl whisk buttermilk and egg; add to flour
mixture. Stir until well incorporated (dough will be very sticky).
Transfer dough to prepared skillet smooth top, mounding slightly
in center. Using small sharp knife dipped into flour, cut 1-inch
deep "X" in top center of dough.
Bake until bread is cooked through and tester inserted into center
comes out clean, about 1 hour 15 minutes.
Cool bread in skillet 10 minutes. Remove from skillet and cool
completely on wire rack. Store any leftovers in tightly wrapped
foil at room temperature.
Yield: 1 Loaf |
