INGREDIENTS:
3 medium tomatoes cut into wedges
1 medium cucumber halved lengthwise and thinly sliced
1 small red onion cut into thin wedges
1 recipe Greek Vinaigrette see below)
8 -10 Greek black olives
1/2 cp crumbled feta cheese (2 ozs)
Vinaigrette
2 tbs olive oil
2 tbs lemon juice
2 tsp snipped fresh oregano or
1/2 tsp dried oregano, crushed
1/8 tsp salt
1/8 tsp pepper

DIRECTIONS:
In a salad bowl combine the tomatoes, cucumber, and red onion.
Add Greek Vinaigrette; toss to coat.
Sprinkle with Greek olives and feta cheese. Makes 4 side-dish
servings.
