INGREDIENTS:
2 lbs of Quartered Flank Steak
1 lb of Pork Ribs
8 ozs of hock (cut into about 1 inch pieces)
1 lb lovely Portuguese sausage called Morcela
8 ounces of Linquisa Portuguese sausage
1 lb of Chorizo sausage
12 cps of water
8 ozs of lean bacon (one piece)
1 tsp of salt
1/2 tsp of crushed black pepper corns
2 cloves of garlic (finely chopped)
2 peeled onions and cut how ever you want; (does not matter)
3 bay leaves
2 nice size sprigs of fresh parsley
3 peeled sweet potatoes and cut into large cubes
1/2 of a small turnip (peel and cut into cubes)
2 carrots peeled
1 collard greens (trimmed down to a nice size)
1/2 cabbage (cut into wedges)
1/2 tsp of whole cloves

DIRECTIONS:
Get a very large pot and place all the meat inside, start with the
flank steak then the Morcela, salpicao, chorizo then the bacon.
Cover all the meat with the 12 cups of water and bring to the boil
on a medium heat, remove all foam from the top whilst cooking.
Now add the pepper, salt onions and parsley stir in, now add the
bay leaves and cloves, Turn down the heat and cook on a medium to
low heat for about 90 minutes are sure to cover the pot. I would
test the sausages after about 35 minutes and once they are cooked
remove.
Check the remaining meat that is left in the pot to see if cooked
(just check now and then through the 90 minute cook time but if
the sausages are cooked before the rest of the meat then remove
and keep warm in the oven.
Once all the meat has cooked remove and keep warm, add the sweet
potatoes, turnips, cabbage, collard green and carrots to the pot
that had the meat in, if water that was in the pot has reduced way
to much just add a little bit more water enough to cover the
vegetables.
Cover the pot and cook on a medium low heat for around about 20
minutes, the vegetables are cooked when they are slightly crunchy,
do not let the vegetables go soggy remove ones that are going to
soft and keep warm.
Once all this is done get the meat and vegetables and cut into
nice bite size bits and put into nice serving soup dishes and
serve.
